Alfa Pizza Ovens: Buying Guide and Fuel Advice

Alfa pizza ovens: Italian built ovens that reach genuine pizza heat, around 500°C (930°F), and bake a pizza in about 90 seconds. The Moderno range comes in wood-fired and hybrid, gas and wood, versions, so you can cook with live fire, gas, or both.

What does a wood-fired pizza oven cost, and what changes the price?

An Alfa Moderno costs between £1,800 and £5,400. The oven is the biggest part of that, but it's not the only part, so here's where the money goes.

Size is most of it

The price climbs with how many pizzas fit on the floor. The Moderno 1 Pizze has a 50 by 40cm cooking floor. The 5 Pizze has 85 by 70cm and weighs 170kg. If you cook for two most weekends and six once a summer, buy for the two.

Wood-fired or hybrid

At the same size, the hybrid costs more. A wood-fired Moderno 2 Pizze is £2,000 and the hybrid is £2,800. At three pizzas it's £2,700 against £3,100. The 3 and 5 Pizze hybrids come with the kit for burning wood as well, so you get gas for a Tuesday and fire for a Saturday.

What it sits on

The oven comes with adjustable feet, and it needs something solid and heatproof underneath. An Alfa trolley base costs from £500 to £1,000. A modular cooking station costs £1,000 or more. A wall or worktop you already have costs nothing, as long as it will take the weight.

The bits you'll buy anyway

A cover, from £85 to £150, because it will rain. A peel, to get the pizza in and out. For a hybrid, a gas bottle. For a wood-fired oven, dry wood, and plenty of it.

What it costs to run

Alfa's own figures: the wood-fired 2 Pizze burns about 1.6kg of wood an hour, and the 3 Pizze about 2kg. On gas, the 1 Pizze uses up to 0.58kg an hour and the 5 Pizze up to 2.1kg. A two-hour pizza night is a few kilos of wood, not a crate.

The fuel matters

Pizza oven fuel: what to burn, and what not to

The single biggest reason a wood-fired pizza oven disappoints is the wrong fuel. Damp or unseasoned wood smoulders, smokes, coats your food in soot and never reaches pizza temperature. This is where being a firewood specialist actually matters to you.

Use kiln-dried hardwood logs, cut small:

Low moisture, high heat, a clean flame. That's what gets an Alfa to 500°C and keeps it there. Alfa specify wood no more than 5cm across for the wood-fired Moderno, so a standard stove log needs splitting first, or use our thin cooking logs.

Use kiln-dried kindling:

To light fast and clean.

Avoid:

Wet or seasoned outdoors wood, softwood offcuts, and anything resinous or treated.

Because firewood is our core business, we can supply the right pizza oven logs with your oven, and keep you stocked afterwards. It is the one thing a national pizza oven brand can't do for you.

The right wood makes the pizza.

Fuel your Alfa with our kiln-dried hardwood logs: low-moisture, high-heat, clean-burning. The difference between a good pizza and a great one is often just better wood. For pizza, go for our thin birch, ash and oak cooking logs: slimmer than stove logs, and made with pizza ovens in mind.

Before you buy

The honest bits about owning a wood-fired pizza oven

The 90-second pizza is real. Here's everything else.

1. It takes half an hour

Every Moderno is built to reach 500°C in about 30 minutes. That's quick for an oven, but it isn't instant. Light it before the dough comes out, not after.

2. The wood has to be small

Alfa's limit for the wood-fired models is 5cm across. Logs sized for a stove won't do, so split them down or use our thin cooking logs. Wet wood won't do either. It smokes, soots the pizza and never gets hot enough.

3. The first few will burn

At 500°C a pizza is done in about a minute and a half, and it needs turning. Most people char a couple before they get the hang of it. Make extra dough the first time.

4. They're heavy

The 1 Pizze is 54kg. The 5 Pizze is 170kg. Pick the spot before it arrives, because once it's there it stays there.

5. Scotland will rain on it

The oven lives outside, so it needs a cover, and the wood needs to be kept somewhere dry. A damp log store will undo a very good oven.

6. A hybrid still needs gas sorting

You'll need LPG or a natural gas supply. The 3 and 5 Pizze hybrids come with a regulator and hose. You'll need to supply the bottle.

The honest bit

When an Alfa is the wrong oven for you

If you want to take it camping. The lightest Moderno is 54kg. A small portable oven is a better buy for that, and we don't sell one.

If you'll use it three times a summer. An Alfa is built to be used hard and often, and it's priced to match. For an occasional pizza, spend a lot less.

If you hate lighting fires and don't want gas. Then a wood-fired oven will feel like a chore. Be honest with yourself about that before you spend £2,000.

If you have nowhere solid to put it. It needs a firm, level, heatproof base. Sort that out first.

Is an Alfa pizza oven better than an Ooni?

They suit different buyers. Ooni is the most affordable, portable way into great home pizza. Alfa Moderno is larger, heavier and holds heat for back to back cooking, which is better if you host or want a permanent outdoor kitchen oven. Both reach serious temperatures.

What fuel should I use in a pizza oven?

For wood-fired ovens, kiln-dried hardwood logs and kindling only, split to no more than 5cm across, which is Alfa's own limit. Our thin cooking logs are the easy option. Dry wood is what reaches and holds pizza heat cleanly. Avoid wet, unseasoned, resinous or treated wood. Gas and hybrid Alfa models run on LPG or natural gas.

Do you deliver outdoor ovens and fires across Scotland and the UK?
